Coconut Jam (Pandan Kaya)

INGREDIENTS:

 

Item

·         Large egg – 4 pcs

·         Panda leave – 5 blades

·         Naco Coconut Cream – 1 box 200ml

·         Water – 140ml

·         Sugar – 180g

·         Salt – a pinch

 

METHOD

  1. Cut pandan leaves into thin strips.
  2. Blend with water to yield panda juice.
  3. In a mixing bowl, sieve the pandan juice.
  4. Add sugar and salt, crack the eggs and mix well into mixing bowl.
  5. Add NACO coconut Cream 200ml and keep on stirring until evenly mix (3 minutes).
  6. Prepare double boiler, and place the pot over it. (tips: Ensure top bowl is able to fit into bottom pot)
  7. Stirring continuously over the boiling water until kaya thickens. Reduce flame to moderate for smoother jam texture.

IKAN DORI KUKUS DAN NENAS

IKAN DORI KUKUS DAN NENAS BAHAN:
  • 400 g. isi ikan dori (dipotong kiub sederhana besar)
  • 200 ml. Kara coconut cream
  • 2 helai daun limau purut (dihiris nipis)
  • 1 sudu besar jus limau
  • 1 sudu kecil sos ikan
  • 1 sudu kecil pes cili
  • Garam
  • 1 biji nenas saiz kecil (dibersihkan dan dipotong kiub sama ukuran ikan dori) Daun salad secukupnya

CARA MEMBUAT :

  1. Campurkan isi ikan dengan semua bahan kecuali nenas dan daun salad. Perap dingin semalaman.
  2. Kukus ikan dan letakkan sekeping ikan kukus keatas daun salad dan letakkan juga sekeping nenas. Hidang dingin jika suka.

TIP MASAKAN: ikan bolih juga digoreng atau dibakar didalam ketuhar. Selain nenas, gunakan kepingan adpokat, epal hijau atau tembikai.

NACO COCONUT MILK PANCAKE

NACO COCONUT MILK PANCAKE A. DRY INGREDIENTS:
  • All Purpose Flour 1 cup
  • Sugar 2 Tbsp
  • Baking Powder 2 tsp
  • Salt (Fine) 1/2 tsp
WET INGREDIENTS:
  • Water 2/3 cup
  • Naco Coconut Milk 1/3 cup
  • Egg 1 egg
  • Unsalted butter or vegetable oil 2 Tbsp
METHOD
  • In a bowl, mix well all (A) dry ingredients with whisk at the centre position of the bowl. (3 - 4 mins)
  • In another bowl, mix well all (B) wet ingredients with whisk. Melt the butter if wish to use butter. (3 - 4 mins)
  • Slowly add the wet ingredients into the dry ingredient a little by little. Mix well gentlely but not too vigorous as to avoid forming issue in the gluten. (3 - 4 mins)
  • Heat a large skillet (non-stick or cast iron) over the medium flame. Fold a sheet of kitchen paper towel in half, and moisten or deep a bit with oil. Carefully rub the surrounding skillet with oiled towel paper as to avoid sticky impact at bottom. (3 - 4 mins)
  • Scoop out 1 full ladle of batter and pour onto a skillet to form a round pancake. (3 - 4 mins)
  • Once the pancake done, transfer to a baking sheet or platter. Serve with your own favourite toppings. (3 - 4 mins)
